Ingredients
Brussels sprouts, 1 lb.
Red bell pepper, 1
Chopped walnuts, 1/4 cup
Cinnamon, 1-2 tsp
Olive oil, 2 tbsp.
Honey, 1/4 cup
Goat cheese, 2oz
Sea salt, to taste
Freshly ground pepper
Directions
Preheat oven to 400 F.
Wash Brussels sprouts and red pepper.
Slice Brussels sprouts into halves and dice red pepper. Place in bowl.
Add chopped walnuts to the bowl, then toss with olive oil and sea salt.
Pour and spread mixture onto a parchment lined sheet pan. Sprinkle the pan with cinnamon and roast for 30-40 minutes.
Shake the pan a few times while cooking to brown the sprouts evenly until crispy.
When done, remove from oven and pour into serving bowl or onto serving platter.
Top with freshly cracked black pepper. Then drizzle with honey and drop crumbles of goat cheese all over the dish.
