Baked Buffalo Cauliflower Bites


Time it takes to make: 40 minutes

Ingredients

1 medium head cauliflower, cut into bite-size florets

1/2 cup flour of choice

1/2 tsp salt

1/4 tsp cracked black pepper

3/4 tsp garlic powder

1/4 tsp smoked paprika

1/2 cup almond milk

1 tbsp. butter or ghee

1/2 cup buffalo sauce

Greek yogurt ranch (for dipping sauce)

Celery sticks

Directions

  1. Preheat oven to 450 degrees F. Line a large baking sheet with parchment paper and set aside.

  2. In a shallow dish, whisk together flour and spices. Add milk and stir to combine.

  3. Dunk cauliflower pieces in batter, a few at a time, letting excess batter drip off. Place in a single layer on the pan.

  4. Bake for about 15-20 minutes until batter is dry, crispy, and browned. Toss halfway through to ensure even browning.

  5. While cauliflower is roasting, heat butter or ghee plus wing sauce in a microwave-safe bowl, or in a small saucepan on the stove. Stir until smooth and combined.

  6. Remove cauliflower from oven, drizzle hot sauce mixture on top, and toss to evenly coat each piece. Return pan to the oven and bake for another 10-15 minutes, again tossing halfway through, until crunchy and caramelized.

  7. Remove from oven and serve immediately with Greek yogurt ranch sauce.

  8. Add some celery sticks for an extra crunch and pop of color. ENJOY!
